As much as I’d love to deny it, the colder months of the year are upon us in Sydney. Time to say goodbye to those sunny beach days, and break out your thermoses, jackets and every last piece of flannel you own.

Gingernut Chai

Gingernut Chai just sums up exactly how I want to feel through the colder months: Warm, spiced and zesty!

This fragrant brew boasts all the richness and complexity we’ve come to love in the humble chai and kicks the ginger up a notch. This intense, earthy spice is nicely balanced by a subtle sweetness that gives way to a silky smooth vanilla finish.

Brewed with water, this tea is complex and layered, with a zesty brightness from the orange peel. But for a traditional chai experience, you’ll want to brew this tea directly in heated milk of your choice, either directly in its pot or in a simmering saucepan. Pair it up with its classic bikkie name-sake and you’ve got the perfect remedy for the cold!

Caramel Brownie

This one is for all you relentless sweet-tooths out there. If you normally drool at the thought of caramel-drenched pancakes, covered in choc chips for breakfast, then this tea will be your stalwart morning companion.

Indulgent is the first word that comes to mind with this brew. The real chocolate and caramel chunks give it a luscious texture, while a black tea base keeps it grounded and bold. 

This tea is delicious just steeped in hot water and finished with a dash of milk to mellow out the flavours. Otherwise, take the bold road and brew this one on a stovetop in simmering milk, for a truly sumptuous dessert-in-a-mug.

Hot Date Chai

It’s no surprise that another chai tea made this list. Coming in a huge variety of styles and with an unrivalled blendability the possibilities with chai are blendless. 

The Hot Date is a rich, intense and warming brew that combines the subtle bitterness and texture of cacao with the earthy, indulgent sweetness of dates while delivering a slow embracing chilli-heat to pep you right up.

As with the previous blends on this list, the Hot Date can be brewed in hot water alone, for a light but full-flavoured daily cuppa, although brewing in hot milk is preferred as it perfectly ties all the flavours together for a smooth and spicy treat.

White White Cocoa

This brew is on the lighter side for this Autumn/Winter list but is nonetheless one of T2’s most popular warming indulgences, and deserves a mention.

The White White Cocoa has gently processed white tea leaves as a base, which gives the brew a delicate, herbaceous flavour and light structure. Complimented by cocoa husks and a dash of flaked coconut, the result is refined a yet full-flavoured brew that artfully showcases the subtlety of its ingredients.

This tea is best brewed using just hot water, as the delicate flavour structure of white tea leaves can be easily overpowered by milk or additional sweeteners.

Red (Rooibos) 

Rooibos is the ultimate all-day cuppa. Free from caffeine, and full of flavour, once you start drinking this herbal brew you’ll never want to go without it.

One of my personal favourite winter warmers, Rooibos has a subtle, woody flavour and fragrance. Its natural subtle sweetness and vanilla undertones make it a perfect accompaniment to any meal. And best of all, rooibos is caffeine-free, so it’ll never keep you up at night if you over-indulge.

Rooibos is great on its own and doesn’t need any milk or sweeteners to help it shine, although a drizzle of honey certainly wouldn’t go astray if you’re that way inclined.
