Yes: The sugary, wispy confectionary reminiscent of fairs and festivals is now re-branding as a much more upscale treat. And to be honest, I think it’s a pretty good idea.

In all honesty, I’ve never really liked fairy floss very much. Probably because it tastes like—well—pure sugar. I know I can’t be the only one who feels this way, but I’m starting to think that perhaps the fairy floss itself wasn’t to blame. Perhaps there was just a lack of creativity in the lolly market that meant fairy floss just got left behind, while other candies got to boast the interesting flavours.

But all that is changing. With gourmet fairy floss popping up around the country, the once-simple candy is taking on a whole new feel. With unique flavours accompanying its unique texture, fairy floss is becoming much more stylish than anyone could’ve imagined.
